Before his time at K-State, Clark managed nightclubs throughout the 1980s and returned to food service once he started a family. He split his time between managing restaurants and catering at hotels. He also was the executive chef for various country clubs.
Clark received a culinary arts degree in 1981 from Penn Valley Community College, Kansas City, Missouri.
